Polysaccharides are long-chain carbohydrates that are a key component of fungi. They are made up of monosaccharides that are connected by glycosidic bonds. Fungi produce different types of polysaccharides based on their biological needs and the conditions within and outside of them. For example, hyper-branched polysaccharides help fungi modify the physical and chemical conditions of their environment
