MATERIALS NEEDED:

  • Rye
  • Water
  • Pressure cooker
  • Pint or quart-sized mason jars with lids
  • Aluminum foil
  • Gypsum (optional, yet beneficial)
  • Karo syrup (optional, but aids nutrition)

PROCEDURE:

Preparation:

  • Measure out the millet based on your desired jar size.

Soaking:

  • Fully immerse the millet in water, letting it soak for 18-24 hours.
  • You can also add food coloring if you would like during this time. Food coloring helps spot mycelium growth and contamination.

Rinsing & Draining:

  • After soaking, rinse with cold water several times to wash off any excess starch and contaminants.
  • Set aside to drain for 30-45 minutes.

Optional Additionals:

  • For better consistency, mix in gypsum.
  • If using Karo syrup, add it now for an extra nutritional boost.

Jar Filling:

  • Filling: Load the jars with the Rye mixture with the correct amount of Rye.
  • PLEASE NOTE: If you followed our recipe (shown above) you shouldn’t have to worry about this however, ensure you leave about a 1-inch gap at the top to facilitate room for expansion and air exchange.
  • Securing Lids: When placing the lid, ensure the rubber seal faces upward. This helps prevent the jars from getting vacuum-sealed during the sterilization process.   • Foil Cover: Wrap the tops of the jars with aluminum foil. This provides an added layer of protection against potential moisture intrusion during pressure cooking.

Pressure Cooking:

  • Seal the jars with their lids, rubber seal facing up, and cover with aluminum foil.
  • Pressure cook at 15 PSI for 90 minutes.

Cooling & Inoculation:

  • After cooling the jars to room temperature, they’re primed for inoculation with your chosen fungal culture.
